Following are a set of P2 options you may wish to implement. No option is perfect for everyone, but sometimes options that have worked at one facility can work at yours. They might also serve as inspiration.

Reviewed Food Processing/Rendering - Kitchen Options

Options below have reviewed by pollution prevention specialists. They are commonly recommended and implemented for facilities.

 
Buy in bulk
Buy bulk food and condiments to use in refillable dispensers instead of single serving packages.
 
Manage shipping containers
Recycle cardboard boxes from shipments, or arrange for your supplier to reuse them.
 
Donate leftover food
Donate leftover food to area food banks or shelters.
 
Reuse plastic containers
Reuse plastic kitchen containers.
 
Buy reusable coffee filters
Buy reusable mesh coffee filters.
 
Donate coffee grounds
Donate coffee grounds for use as fertilizer.
 
Feature beer on draft
Feature beer on draft to cut waste and storage space requirements.
 
Recycle stained linen
Make cleaning rags or chef's aprons from torn or stained linen.
 
Use reusable cleaning rags
Use cloth napkins or rags instead of one-time use materials to wipe up spills.
 
Recycle material used in food preparation
Recycle glass, aluminum, cardboard and fryer oil (if possible) that is used in food preparation. If your volume isn't large enough for the recycler, recruit neighboring restaurants to participate so the quantity is enough for the program.
 
Use refillable dispensers
Buy cleansers and mixes in concrete form, and use refillable dispensers.
